I have not had chili and eggs for years. It really is quite a delightful dish, one that my mother use to make for me and my brothers quite often. It’s a very easy dish to make. Scramble some eggs, heat up some chili, pour the chili over the scrambled eggs, and eat.

My wife took it to another level with the grated cheese, and added some class with the bowl from the Pea Soup Restaurants.
